It appears that FOR EACH product I have to RE-CREATE the variant which is a PITA. it seems Clover was not designed for retail stores like a boutique where one product comes in 3 sizes and the size is part of the default production creation ui. the variant thing is not very efficient.
Yes, I agree, this isn't ideal. This is the way it works now. We do have a site where merchant's can request new features and this is monitored by our product folks - https://clover.uservoice.com/. If you search for variants, I see a few related issues.
