When invoking the action secure pay which is intended to get the credit card payments from the device. The device also prompts all the custom tenders the merchant has configured. This behaviour is found only on the clover station 2018 but not on the clover mini. Is there any way this can be hidden.

No that is not possible. You can pass a particular custom tender but you cannot disable them. I think the idea is that the tender is up to to the merchant; if they don't want them, they should disable / uninstall them. Not saying this is 100% valid just giving some background.
There are merchant and customer facing tenders. I'm guessing you see a difference on Station 2018 because you are seeing merchant facing tenders there. On Mini's "secure paymets" screen you'd be seeing customer facing tenders.
(And don't get confused between "custom tenders" and "customer (facing) tenders". Perhaps some poor choice of terminology there).
