Standard ESC/POS commands don't appear to work on the Clover printer, is there any documentation on how to bold, centre, change font size etc?

If you are using the text print job, no it does not allow any formatting other than what you can achieve with spaces and tabs.
If you want to do anything more, you need to use view or image print job. You can create your formatted text either with an Android View, by drawing on a Canvas, or whatever other method you want as long as at the end of the day you can transform it to an image.
