Select RESTful API endpoints consistently responding with a 401 – unauthorized error. This is on our MiPayments (XRWF97E06Z8ER) web application that just had the Read/Write of Orders added to the application (new API key generated after confirmation that these were added) as well as CareStack Pay (P850DXX1NR4SY) that has been working without issue for months.

If you just changed permissions generating a new token is not enough. The web application needs to be uninstalled and reinstalled.
