order state for cash payment

Hi, we are building our app by rest API, where orders will be placed rest API call.
My question is, if an order is supposed to take payment through cash, then what should be the order state?

At the time of order creation? I think you want to leave it as open. When the customer shows up to the merchant the merchant would bring up the order and add a cash payment at that time.

I am interested in offer cash payment, could you point some documentation of examples? I have been trying to do it using the rest api, but i have no luck on doing it
