we want to create order in clover pos so that kitchen team of a restaurant can look it quickly and start preparing . we are using other payment getaway for payment.
so what api should be use for this between atomic and custom order creation

Do we need to associate all foods in to clover inventory from our platform or it is optional?
It depends on what API you use. Please read the links I provided they explain the order APIs and what is/is not supported. The atomic endpoints do not currently support non-Clover inventory.
